Stay on Track During Grillin’ Season

Warmer weather is ahead which means outdoor gatherings with friends, family and food. To stay on track during this time, it helps to plan ahead! Stick to your regular meal schedule instead of “saving up” to overeat later on. Prep fresh fruits and vegetables to snack on instead of chips, prepare turkey burgers and chicken tenderloins instead of beef burgers and processed hot dogs, and try whole fruit popsicles instead of brownies and ice cream. Don’t feel obligated to eat everything that is offered to you. When you fill your plate, eat your proteins and veggies first. The protein and fiber will help make you feel full quicker. This can help stop you from overeating. Bring tupperware and baggies to pack up leftovers to save for later. Remember to stay active during this season by participating in outdoor games with the kids, or taking a family walk in the park.

Grilled Vegetable Kabobs

1 cup whole mushrooms

2 medium zucchini

½ red onion

1 red pepper

2 Tablespoons olive oil, 1 Tablespoon balsamic vinegar (can use red wine vinegar)

Garlic powder and black pepper

Cut mushrooms in half, zucchini into ½ inch slices, and red onion and pepper into 1 inch squares. Slide vegetables onto metal or wooden skewers. Brush with olive oil and vinegar, and sprinkle with garlic powder and pepper. Grill until tender, 4-5 minutes each side. No skewers? Place veggies in an aluminum foil packet.
